Vegetable Pasta Recipe

Vegetable pasta makes perfectly satisfying one-bowl meal. Rotini pasta is cooked with green bell pepper, broccoli, sun-dried tomatoes and fresh basil in cream cheese and tomato sauce.

Method for Tomato Sauce:

  1. In a heavy bottom sauce pan, mix together tomato sauce, dried oregano, red chili powder, sugar and salt.
  2. Boil for 6 to 7 minutes on medium heat stirring occasionally, and keep aside.

Method for Vegetable Pasta:

  1. Cook the pasta as per instructions on the box and keep aside.
  2. Heat a large pan on medium heat, add oil.
  3. Add chopped basil, stir for few seconds.
  4. Add chopped sun dried tomatoes, green bell pepper and broccoli, stir fry for 3 to 4 minutes until broccoli is tender and crisp.
  5. Add sliced olives, stir fry for few seconds.
  6. Add cooked pasta, tomato sauce, cream cheese, red chili flakes and salt, mix well.
  7. Stir fry 1 to 2 minutes, turn off the heat.
  8. Sereve with a salad and Cheese Bread.

Ingredients

  • For Vegetable Pasta:
  • 1 package Rotini Pasta
  • 1/4 Cup Sun Dried Tomatoes, chopped
  • 1/2 Cup Green Bell Pepper (Capsicum), chopped
  • 1/2 Cup Broccoli, medium florets
  • 1/2 Cup Black Olives, sliced
  • 1 Tablespoon Basil, finely chopped
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Cream Cheese
  • 1 Teaspoon Red Chili Flakes
  • Salt to Taste
  • For Tomato Sauce:
  • 1 15 oz Can Tomato Sauce
  • 1/4 Teaspoon Dried Oregano
  • 2 Teaspoons Red Chili Powder
  • 2 Tablespoons Sugar
  • Salt to Taste
