Doodhi Muthia Recipe

Doodhi na muthia is a gujarati dish. Muthia is steamed dumplings, made using bottle gourd, wheat flour, gram flour and spices. Enjoy as appetizer or snack with green chutney or ketchup.

Method:

  1. In a large bowl, mix all the ingredients for the muthia in a bowl and form a soft dough adding little water if required.
  2. With greased fingers, divide the mixture into 4 parts and roll out into cylindrical shapes 7 -8 inches long.
  3. Steam for 25 to 30 minutes till done. To check if the muthias are done, insert a toothpick should come out clean.
  4. Let it cool for 15 minutes and slice 1 inch pieces, keep aside.
  5. Heat a non stick pan on medium high, add oil.
  6. Add mustard seeds wait until they crackle, add the sesame seeds.
  7. Add the sliced muthia and stir until they are light brown in color.
  8. Garnish with chopped cilantro and serve hot with green chutney or ketchup.

Ingredients

  • 2 Cups Bottle Gourd (Doodhi / Lauki), grated
  • 1 Cup Wheat Flour
  • 1/2 cup Gram Flour (Besan)
  • 3 Tablespoon Cilantro (Coriander Leaves), chopped
  • 1 inch piece Ginger, grated
  • 2 Green Chili, chopped
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Sugar
  • 4 Tablespoon Oil
  • 1/2 Teaspoon Baking Soda
  • Salt to Taste
  • For Tempering:
  • 2 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Sesame Seeds (Til)
  • 3 Tablespoon Oil
  • To Garnish:
  • 2 Tablespoon Cilantro (Coriander Leaves), chopped
