Pesto Pasta Salad Recipe

A quick and easy farfalle pasta and avocado tossed with sun-dried tomatoes, fresh basil and pine nut pesto. This vegetarian pasta salad is perfect as a side dish or a main course.

Method:

  1. Cook the pasta as per instructions on the box and keep aside.
  2. Blend the sun-dried tomatoes, olive oil, pine nuts, basil, black pepper powder and salt in a food processor and blend until the tomatoes are finely chopped.
  3. Transfer the tomato mixture to a large bowl.
  4. Add the pasta, avocado, red chili flakes and salt to pesto and mix well.
  5. Serve as a side dish or a main course.

Ingredients

  • 1/2 package Farfalle Pasta
  • 1/2 Cup Avocado, diced
  • 8 to 10 Sun-Dried Tomatoes, chopped
  • 1/2 Cup Packed Fresh Basil Leaves
  • 1/4 Cup Pine Nuts (Chilgoza)
  • 1/4 Cup Olive Oil
  • 1/4 Teaspoon Black Pepper Powder, freshly ground
  • 1 Teaspoon Red Chili Flakes
  • Salt to Taste

  1. I used to make this pasta salad with bowtie pasta, pesto, cranberries, and pine nuts… but I can’t remember what else was in it! I have googled every combination of these ingredients and can’t find it on any website. Does anyone make anything like this and know where I can find it?

  2. I make pesto and use it in salads and pasta sauces but it’s growing so fast that I need to harvest once per week…Any other suggestions or recipes?
