Rabri is a milk based sweet dish, made by boiling the milk on low heat for a long time till it thickens. Served with gulab jamun, jalebi or malpua.

Method:

  1. Combine khoya, milk and sugar.
  2. Cook in a heavy bottom sauce pan on medium heat.
  3. Stirring occasionally, until thick for about 10 – 12 minutes.
  4. Garnish with pistachio and saffron, serve warm or cold.

Ingredients

  • 2 Cups Milk
  • 1 Cup Sugar
  • 6 Tablespoon Khoya (Milk Solids), grated
  • To Garnish:
  • 1 Tablespoon Pistachio, sliced
  • 10-12 Strands of Saffron (Kesar)

  1. Can I use 1%milk for this or do I have to use Whole milk?

  2. I prefer to use Whole Milk, for thicker rabri.
