Spinach Almond Soup Recipe

Spinach Almond Soup is a delicious vegetarian soup. Enjoy as a light supper with bread, or as the first course of a dinner. Combination of spinach and almond makes an incredibly satisfying creamy soup.

Method:

  1. Soak almonds in 1/2 cup of water, for 2 hours.
  2. Drain almonds, remove the skin and keep aside.
  3. Heat oil in pan, add chopped onions and saute.
  4. Add garlic, ginger, chili and salt, cook for 2 to 3 minutes.
  5. Add spinach, saute until spinach leaves become tender.
  6. Add 2 cups of water, boil it for 7 minutes.
  7. Blend entire mixture and almonds in a blender and puree.
  8. Once pureed, pour back in pan, add milk and one cinnamon stick, boil for 5 minutes.

Ingredients

  • 2 Cups Baby Spinach
  • 10 Almonds
  • 1 Tablespoon Oil
  • 1/2 Onion, chopped
  • 1 Clove Garlic, chopped
  • 1 Green Chili, chopped
  • 2 Cups Milk
  • Salt to Taste
  • 1 Cinnamon Stick
