Instant Handvo Recipe

Handvo is traditionally prepared from rice and dals with or without vegetable. This instant handvo is a quick version of favorite Gujarati snack. Instant dhokla flour is mixed with vegetables and spices and cooked on skillet. Serve with chutney or ketchup. This is also known as Dangela.

Method:

  1. In a big bowl, prepare dhokla batter using oil, yogurt and water as per instructions on the box.
  2. Add chopped fenugreek leaves, corn kernels, carrot, green beans, green chilies, cilantro and mix well.
  3. Add turmeric powder, red chili powder, coriander-cumin powder, asafoetida, baking soda, sugar and salt, mix again and keep it aside for 5 minutes.
  4. Heat a small pan on medium heat, add 2 tablespoon oil.
  5. Add 1 teaspoon mustard seeds and 1 teaspoon sesame seeds, wait until seeds crack, add this to batter and mix well, make four equal parts and keep aside.
  6. Heat non stick shallow frying pan or skillet over medium heat, add 2 teaspoon oil.
  7. Add 1/4 teaspoon mustard seeds and 1/4 teaspoon sesame seeds, wait until seeds crack.
  8. Pour 1 part of batter in center of pan and spread it is circular motion from inside out.
  9. However, do not make too thin like dosa thickness should be like Uttapum.
  10. Cover with lid and let it cook for 2 to 3 minutes, over a medium heat.
  11. Open the lid and gently turn over handvo.
  12. Cook on flip sides for 2 to 3 minutes with lid.
  13. Serve hot with chutney or ketchup.

Ingredients

  • 1 Packet Ready Dhokla Mix (White Khatta Dhokla)
  • 1/4 Cup Yogurt
  • 1/4 Cup Fenugreek Leaves, finely chopped
  • 1 Carrot (medium size), grated
  • 2 Tablespoons Corn Kernels
  • 2 Tablespoons Green Beans, diced
  • 2 Tablespoons Cilantro (Coriander Leaves), finely chopped
  • 2 Green Chilis, finely chopped
  • 1 Tablespoon Coriander-Cumin Powder
  • 1 Teaspoon Red Chili Powder
  • 1/4 Teaspoon Turmeric Powder
  • A Pinch of Asafoetida
  • 1/2 Teaspoon Baking Soda (Sodium Bicarbonate)
  • 1 Tablespoon Sugar
  • Salt to Taste
  • 1 Tablespoon Mustard Seeds
  • 1 Tablespoon Sesame Seeds
  • 2 Tablespoons Oil + Oil for Cooking
