Mexican Rice Recipe

Mexican Rice Recipe

Mexican rice is a wonderful side dish for any meal. The rice is sauted with green bell pepper, corn and other spices, then slowly simmered in vegetable stock. Serve with Enchiladas, burittos, fajitas, etc.

Method:

  1. Heat a large saute pan on medium heat, add oil.
  2. Saute green bell pepper, corn and rice oil until bell pepper is soft.
  3. Add salt, red chili powder and vegetable stock to the pan, bring it to boil.
  4. Cover the pan and reduce heat to low, simmer for 20 minutes or until all of the liquid is absorbed.
  5. Add basil leaves and chili sauce, mix gently.
  6. Cover pan and allow to sit for 5 minutes. Turn off heat.
  7. Serve with Enchiladas, burittos, fajitas, etc.

Ingredients

  • 1 Cup Rice
  • 1/2 Cup Corn
  • 1/2 Cup Green Bell Pepper (Capsicum), diced
  • 2 Cups Vegetable Stock
  • 1/2 Teaspoon Red Chili Powder
  • 1/2 Teaspoon Dried Basil Leaves
  • 1/2 Teaspoon Chili Sauce
  • 2 Tablespoons Oil
  • Salt to Taste
