Bhindi Masala Recipe
Bhindi Masala is Okra sauteed with Tomatoes and spices. It is delicious Indian curry which is generally served with chappati or roti.
Method:
- Cut bhindi (Okra) in diagonal pieces.
- Heat the oil in frying pan and shallow fry bhindi (okra).
- Keep fried bhindi (okra) aside.
- Heat oil in a pan. Add cumin seeds wait until seeds crack.
- Add pinch of asafoetida, then add green chili and ginger paste, fry for one minute.
- Add tomato pieces, salt, turmeric powder, red chili powder, coriander powder, garam masala powder and mix well, cover the pan and cook for a few minutes until tomatoes become soft. Stir if needed to avoid the mixture from sticking to the pan.
- Add fried bhindi (okra) and mix gently. Keep on heat for two minutes and then remove the pan.
- Serve hot with chappati or roti.

I am an indian trying to learn indian cooking..
My Mom always used to add coriander in any curry that she would make. I don’t understand the role of it – I mean, I tried tasting it, but it didn’t have any particular taste like garam masala etc. Is it only used for the texture of the curry or only aroma?
As an aside, I am trying to make bhindi (okra). Do we add coriander in it?

I was wondering if any1 knew how to make a soup with okra in it? Someone I once knew made it for me and a couple of friends many yrs ago and I was looking 2 b able 2 make an okra soup. What all does it include? What are all the ingredients? Please help. Thank you.
It didn’t have any meat in the soup.
