Kheer is a traditional South Asian sweet dish, made by boiling rice with milk and sugar, and flavoured with cardamom, saffron, pistachios or almonds. It is served during a meal or also enjoyed as a dessert.

Method:

  1. Soak rice in water for 1/2 an hour.
  2. Drain the rice and spread over a napkin for 10 to 15 minutes.
  3. Grind rice coarsely, add melted ghee or unsalted butter, keep aside.
  4. In a saucepan boil milk and saffron, on medium high heat.
  5. Add ghee and rice mixture, turn heat to medium, boil for 20 minutes.
  6. Add sugar, almonds and pistachios, cook for 5 minutes.
  7. Turn off the heat and add cardamom powder, mix well.
  8. Enjoyed hot or cold as dessert.

Ingredients

  • 4 Cups Milk
  • 1/2 Cup Rice
  • 1 Teaspoon Ghee or Unsalted Butter, melted
  • 1½ Cups Sugar
  • 12 Strands Saffron (Kesar)
  • 1 Teaspoon Cardamom, powdered
  • 1 Tablespoon Almonds, finely chopped
  • 1 Tablespoon Pistachios, finely chopped
