Cheese Quesadilla Recipe
Cheese quesadilla is a flour tortilla filled with cheese then folded in half. It is a Mexican dish, there are many different variations that can be added, it makes complete meal in itself. Crispy cheese quesadillas are easy and quick to make.
Method:
- Heat wide round skillet over medium high heat.
- Add 1 teaspoon oil, place one tortilla in skillet.
- Sprinkle 3 tablespoon cheese onto half of tortilla.
- Fold tortilla over and press flat, flip once it turns golden brown.
- It only takes approximately 1 minute per side for quesadilla to turn golden brown.
- Repeat the process with rest of tortilla.
- Cut into pieces and serve with a dollop of sour cream.

I have tried about 3 times to make quesadilla in the last few days, and no matter what I try to change about my recipe, they keep coming out *extremely* floppy and not-at-all crispy!
I am using flour tortilla, which I think is what I’m supposed to use. (I mean, I’m not supposed to use like a hard taco shell, am I??)
I grease the pan, put in the tortilla, put in the cheese, cook it at a low heat for about 4 minutes, fold it, and take it out. The cheese is fine, the spices are fine, the dipping sauces are fine. … It’s just that darned tortilla that’s as floppy and non-crispy!
What do you suggest I do to make this recipe like it’s made in restaurants?
I just made another batch by putting lots of oil in the pan, microwaving the tortilla for 1 minute between two paper towels (which helped!), and turning it on high. — Now it just tastes hard and overcooked like burnt popcorn.
I guess I’ll have to experiment with a happy medium. Maybe microwaving the tortilla for like 45 sec on a medium power, then cooking it with the cheese on a medium-low setting. We shall see!
