Makai Khichadi Recipe

Makai khichadi or Makai chevdo is a popular Gujarati snack. Tender sweet corn kernals are simmered with milk and spices. Enjoy this sweet and spicy Indian version of corn chowder as snack or breakfast.

Method:

  1. Heat non stick pan on medium heat, add oil.
  2. Add mustard seeds and sesame seeds, wait until seeds crackle.
  3. Add asafoetida, chopped green chilies and turmeric powder give it a quick stir.
  4. Add corn kernals and stir fry for 2 to 3 minutes.
  5. Add milk and salt, mix well.
  6. Cover with a lid and cook on a slow flame for 10 to 15 minutes or until corn is tender, while stirring occasionally.
  7. Add lemon juice, mix well and cook uncovered for another 1 minute.
  8. Garnish with chopped cilantro leaves and serve hot.

Ingredients

  • 2 Cup Fresh Tender Corn Kernels
  • 3/4 Cup Milk
  • 2 Green Chilies, finely chopped
  • 1/2 Teaspoon Mustard Seeds (Rai)
  • 1/2 Teaspoon Sesame Seeds (Til/Tal)
  • 1/2 Teaspoon Turmeric Powder (Haldi/Haldar)
  • A Pinch Asafoetida (Hing)
  • 1/2 Tablespoon Lemon Juice
  • 2 Tablespoons Oil
  • Salt to Taste
  • To Garnish:
  • 2 Tablespoons Cilantro (Coriander Leaves), finely chopped
