Dahi Vada Recipe

Dahi vada is a popular starter, can be eaten as snack or as a part of a meal. There are lots of variations to this recipe, in different parts of India.

Method:

  1. Rinse the urad dal 2-3 times in warm water and soak it overnight.
  2. Drain and coarsley grind the urad dal using very little water.
  3. Add salt, green chili-ginger paste and 2 teapoon coriander leaves to this mixture.
  4. Heat oil in a saucepan on medium.
  5. Take the batter with a big spoon or you could use your fingers and gently slide the batter into the hot oil.
  6. Be careful not to splatter hot oil.
  7. Fry till vadas are golden brown on both sides. Set aside till you are done making all the vadas.
  8. When ready to eat, Soak the vadas in cold water for 3-5 minutes.
  9. Squeeze out the water from the vadas, by gently pressing them between your palms and arrange on a serving dish.
  10. Pour chilled yogurt over them followed by date chutney, red chilli powder, cumin powder, chaat masala (optional) and chopped coriander leaves.

Ingredients

  • 1 Cup Urad Dal
  • 1 Teaspoon Green Chili Paste
  • 1 Teaspoon Ginger Paste
  • 1 Teaspoons Cilantro (Coriander Leaves), chopped
  • Salt to Taste
  • Oil to Deep Fry
  • To Serve:
  • 2 Cups Yogurt, whisked and chilled
  • 1/2 Cups Dates/Tamarind Chutney
  • To Garnish:
  • 1 Teaspoon Roasted Cumin Powder
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Chaat Masala(Optional)
  • 1 Teaspoon Cilantro (Coriander Leaves), chopped
