Turiya Ne Sev Nu Shaak Recipe

Turiya ne sev nu shaak is a unusual combination of ridge gourd and sev(bhujiya). Ridge gourd or chinese okra curry is very quick and easy to make and goes well with chapati, puri or paratha.


  1. Heat a pressure cooker on medium heat, add oil.
  2. Add cumin seeds, wait until seeds crackle.
  3. Add asafoetida and diced turia, stir fry for a minute.
  4. Add red chili powder, turmeric powder, coriander powder, cumin powder, salt and 1 tablespoon water, mix well.
  5. Pressure cook for 3 whitsle on medium heat.
  6. Let pressure cooker cool down and open it.
  7. Add sev stir gently and cook for 1 minute.
  8. Garnish with chopped cilantro, serve with paratha, puri or chapati.


  • 2 Turiya(Ridge Gourd, Chinese Okra), peeled and diced
  • 1 Tablespoon Oil
  • A Pinch of Asafoetida
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Turmeric Powder
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Cumin Powder
  • 4 Tablespoons Sev
  • Salt to Taste
  • To Garnish:
  • 1 Tablespoon Cilantro (Coriander Leaves), chopped
