Kesar Pista Shrikhand Recipe

Kesar Pista Shrikhand is flavored with saffron and Pistachio. It is popular Indian dessert. Traditionally, shrikhand is served with poori in Gujarati food.

Method:

  1. Tie yogurt in a clean cheese cloth or muslin cloth, hang it in cool place for 5 to 6 hours.
  2. Untie cloth, yogurt will become thick in consistency.
  3. Rub saffron into 1 tablespoon milk till well broken and dissolved. Keep aside.
  4. Transfer yogurt in a bowl, add sugar, condense milk, pista and dissolved kesar.
  5. Beat well till sugar has fully dissolved into yogurt.
  6. Garnish with chopped pista and strands saffron.
  7. Chill for 1-2 hours before serving.
  8. Enjoy shrikhand with poori or as dessert.

Ingredients

  • 4 Cups Yogurt
  • 6 Teaspoon Sugar
  • 2 Tablespoon Pistachio (Pista), coarsely chopped
  • 10 to 12 Strands Saffron (Kesar)
  • 1/2 Cup Condense Milk (not Evaporated Milk)
  • To Garnish
  • 1/2 Tablespoon Pistachio (Pista), coarsely chopped
  • Few strands of Saffron (Kesar)
